AROMATICS: Fresh red and berry fruit, ripe cherries, and forest floor complexity is coupled with chanterelle mushrooms and a wet rock minerality
TASTE: Dry, medium bodied with eloquently graceful, but firm tannins. Complex and balanced fruit and silky acid structure lead to amazing mid -palette texture, incredible mouth feel and a long satisfying finish
TREATMENT: 16 months in mature French Burgundian oak barrels
SERVING SUGGESTIONS: Roasted duck and lamb, rich cheeses, mushrooms and truffles, and artisan thin crust pizza
AGING: Drinking very well now, but with many years of cellar potential

Winemaking and Analysis
- Pinot Noir, also known as ‘the heartbreak grape,’ is the most sought-after grape in the world, an ever-sensitive challenge for any vineyard, and not commonly thriving in Nova Scotia
- 100% of the grapes were bravely grown by Andrew and Lise Rand, located on the North Mountain
- 50/50 whole berry and crushed fruit gently fermented in cooler temperatures before a light pressing at 1.3 bars
- Matured in older French Burgundian oak barrels for 16 months. Full malolactic fermentation followed
- Only 200 cases were produced
