GRAPES: 50% L’Acadie, 50% Petit Milo
AROMATICS: Fresh apricots, baked bread, hints of honey, anise, and nutmeg
TASTE: Dry, fresh but subtle minerality. Notes of lemon zest, green apples, brioche, and blood orange
TREATMENT: 18 months in tirage, Cuvee consists of 85% stainless-steel fermentation, 15% neutral oak barrels, and a partial MLF
SERVING SUGGESTIONS: Best served well chilled, pairs nicely with buttery lobster, local oysters, and savory appetizers
AGING: Drinking very well now, or cellar through until 2034

Winemaking and Analysis:
- This Non-Vintage Traditional Method sparkling is a 50/50 Cuvee of L’Acadie Blanc, and Petit Milo
- Base wines representing vintages from 2017 to 2021
- After assembling, the cuvee was actively bottled with yeast, for the secondary fermentation under pressure in the bottle; then left in tirage for 12 months
- Disgorged with a small dosage of sugar added, leaving this wine dry or classified as ‘EXTRA BRUT’
- 1600 bottles were disgorged in 2024; with more to undergo an extended multiyear tirage, for future release
